
Mint Pesto Greek Pizza
Trader Joes pizza dough or Middle Eastern flat Bread
½ C. Kalmata olives, halved
½ cup sliced tomatoes, seeded
½ C. crumbled feta cheese
1 C. fresh baby spinach leaves
Mint Pesto:
1 C. fresh mint
1 C. fresh parsley or basil
½ C. toasted cashews or walnuts
1 clove garlic
½ C. grated Parmesan- Romano cheese
Olive oil
Oil pizza pan or prepare pizza stone. Stretch out dough on pan or use premade flat bread.
In food processor: place herbs, nuts, garlic and Parmesan-Romano. Pulse until coarsely chopped. Add olive oil and pulse, adding enough oil until desired consistency is reached.
Spread mint pesto over dough or flatbread, lay on tomatoes, olives and feta. Bake at 450* for 10-20 minutes until done.
Remove from oven and add fresh spinach leaves over pizza. Serves 4 (8 slices)
