An easy side dish for a summer BBQ or potluck. This is equally tasty without the rice if desired, and will look even more pretty and colorful. If you need to fill people up, though. add the grains!
2 cans
black beans, rinsed & drained
4 C. chopped tomatoes
3 C. cooked
rice (or quinoa)
3 C. roasted corn, thawed
1 ¼ C. green onion, chopped
½- ¾ C. Italian dressing (or use dressing below omitting the 6 T. of cilantro)
6 T. fresh cilantro or parsley, chopped
6 T. fresh cilantro or parsley, chopped
1 avocado,
diced on top (optional)
Combine
ingredients, refrigerate. Before serving top with feta and avocado.

1 C. choppped
fresh cilantro
1/2 C. olive
oil
4 cloves
garlic, minced
3 limes,
juiced
