Apple Cheddar Galette

  This is  a great recipe for an autumn brunch or as an appetizer. It's both savory and sweet.


1 pre-made pie crust
1 ¼ C. sharp white cheddar cheese, grated
1 t. salt
½ t. pepper
2 t. thyme
2 large Granny Smith apples, peeled, cored and sliced thin
Juice from 1 lemon
1 T. honey or agave
¼ t. nutmeg

Preheat oven to 400°F.

Place dough on parchment lined baking pan.
In a small bowl combine grated cheese with thyme, salt and pepper. Layer mixture (reserving 3 T.) over crust, leaving 1” boarder on all sides.

In a medium bowl whisk together lemon juice, honey and nutmeg. Add sliced apples and gently toss to coat. Arrange apple slices or pile in a mound. Fold edges of pastry toward center over apples, pressing gently to seal (dough will only partially cover apples). Pour any excess liquid from filling into the center. Sprinkle remaining 3 T. of cheese mixture over galette and bake 35-40 minutes. Slide pastry spatula between parchment and galette. Let stand at least 10 minutes. Cut into wedges and serve warm.

* Can be made using puff pastry too—bake at 400* for 30 minutes, pressing pastry sides in every 10 minutes, if needed.
