Trader Joe's Inspired ~ Roasted Corn Salad with Lime Cilantro Dressing

SALAD:1 bag roasted corn, thawed
¼ red bell pepper, diced
¼ green bell pepper, diced

½ red onion, chopped
1 t. white sugar
Salt and pepper to taste
1 T. hot sauce

DRESSING:1 C. choppped fresh cilantro

1/2 C. olive oil

4 cloves garlic, minced

3 limes, juiced

Mix corn, peppers and red onion in a medium bowl. In a blender or food processor, mix cilantro, olive oil, garlic, lime juice, sugar, salt, pepper and hot sauce. Blend until smooth and stir into the corn salad.
