Yummy Comfort Food! This recipe is just about as good as my Gammie's Southern Chicken Pie. Double this and make one for the freezer. You can also cook the filling in a crock pot,and then put it in pie crust.
3 C. shredded chicken
1 small onion, chopped fine
2-3 cloves garlic, chopped fine
1 or 2 potatoes, peeled and diced
2 or 3 carrots, diced
1/2 frzn peas (or other vegis)
Spices: bay leaves, Greek or Italian spices, garlic powder, dash pepper sauce (hots), or whatever you like.
2 pie crusts
1 C. gravy mixed with broth
Mix carrots and potatoes and microwave with a bit of water until crisp tender 1-4 minutes.
In 1 T. oil sauté onion and garlic. Add all other vegetables, sauté a few minutes then add gravy. (powder mixed with broth is fine) Fold in chicken. Adjust gravy to thin or thicken as desired. Add spices and dash of pepper sauce. Heat through on low simmer.
Fill crust with mixture, add top crust. Brush with egg white. Bake at 375* for 30 minutes or until done.

Forget the pie crust. Out of the crock pot and into a bowl. Deeeelicious! ◡‿◡
