Italian Chopped Salad



Salad Ingredients:
1 to 2 heads romaine, cut into strips (+spring mix-opt.)
1/3 C. fresh basil, thinly sliced into bite size ribbons
1/4 lb salami or bacon or prosciutto, chopped
1/3 C. red onion, sliced and chopped
1 1/2 C. marinated artichoke hearts drained and quartered
1 1/2 C. Kalmata olives pitted and halved (opt.)
1 avocado, sliced and slices halved
4 Roma tomatoes, chopped big (opt.)
Mozerrela or provolone slices, cut in strips OR shaved Romano or Parmesean
Cucumber (opt.)
Grilled chicken breast, cut into bite size strips (opt.)

Mix all ingredients in a big pretty bowl and toss with Basil Vinaigrette

Basil Vinaigrette:

1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
3 tablespoons shredded basil leaves
1 garlic clove, thinly sliced
1/2 teaspoon crushed red pepper
