Roasted Sweet Potatoes with Garam Masala


Garam Masala (“warm spices”) is an Indian spice blend with cinnamon, nutmeg, clove, cardamom, black pepper and cumin.

6-7 sweet potatoes ( about 3.5 lbs)
1 yellow onion, chopped coarsely (opt.)
3 T. olive oil
½ t. salt
2-3 t. Garam Masala
2-3 C. brown sugar
salted or candied pecans (opt.)

Preheat oven to 450*

Peel Sweet potatoes and slice into 1-inch thick rounds. In a bowl, combine potatoes with all other ingredients. Arrange in a single layer in a large oil coated baking pan and drizzle with oil or melted butter and sprinkle with salt, garam masala and brown sugar. Add pecans if desired. Place in oven and roast for 40 minutes. (Can make a day ahead and reheat.) Serves 8-10
