I had this on the patio of a creek side restaurant in Ashland, Oregon this summer. After several attempts trying to recreate it, I came up with this easy recipe that is so refreshing on a hot day.
Mint leaves – ¼ C. per person
Lime juice – 1 lime per person
Honey or Agave – 1-2 tsp per person
Chilled Club Soda - 1 cup per person
In a blender or small food processor add mint leaves and lime juice, blend for one minute. Sieve through a strainer.
Add honey and soda water. Serve with ice and a fresh mint sprig for garnish.
