Easy Lemon Basil Cake

This is a nice easy dessert or great for a brunch buffet too. Hide the box!

1 Pkg  Trader Joe's Vanilla Cake/Baking Mix 

2 eggs 

1/2 C. oil or melted butter

 1 C. cold milk

Zest of 2 lemons

1/2 C. finely chopped fresh basil

Preheat oven to 350 degrees. Mix together cake batter as directed.  When the batter is smooth, stir in lemon zest and basil. Spread batter in oiled 8x8-inch pan.  Bake 40-43 minutes or until toothpick inserted in center comes out clean.

Cool and remove from pan.  When serving slices, top with blueberries or whipped cream.
