Chinese Chicken Salad



This main dish salad serves 6-8
Great on a hot summer day!














1/2 lb. asparagus, cut diagonally into 1-inch pieces
1 can mandarin opranges 1 bag wantons strips
6 C. shredded cabbage or lettuce cut into ¼” strips
2 C. cooked chicken (grilled teriyaki is best), torn in bite size peices
1 large avocado, cubed
4 green onions (including green tops), sliced diagonally 1/3 C. sliced almonds, toasted

DRESSING:
2 T. rice wine vinegar
2 T. brown sugar
1 1/2 T. soy sauce
1 T. red chile sauce
1 1/2 t. grated fresh ginger
salt and pepper to taste
1/4 cup vegetable oil

Boil asparagus until crisp-tender, 2 to 3 minutes. Drain, rinse with cold water to stop the cooking. Set aside.

Dressing: Combine all ingredients in a bottle that you can shake well. Shake well!
In a nice large serving bowl, toss the cabbage or lettuce, chicken, and asparagus with the dressing. Top with avocado, orange slices, and wonton strips, then garnish with green onions and toasted almonds.
