This goes together very fast and tastes great.
1 T. olive oil
1/2 C. onion, chopped
2 cloves garlic, minced
3 T. ginger, minced
4 C. chicken broth
2 T.seasoned rice vinegar
2 T. soy sauce
1 pkg frozen won tons, or small pot stickers
3-4 C. fresh baby spinach
1 T. toasted sesame oil
1 dash Chili oil
Heat olive oil in a large pot, add onion and saute 2 minutes. Add garlic and ginger, saute one more minute. Add chicken broth, rice vinegar, and soy sauce. Bring to a boil over high heat. Add won tons and simmer until hot in center 5-7 minutes. Add sesame oil and chilie oil, and spinach. Stir gently until spinach is cooked, one minute. Serves 4

I use the chicken cilantro mini wontons from Trader Joes for this.
